There is nothing better than a party platter when you have a hungry crowd to feed, they´re easy to make and offer an array of flavors. This Spanish Party Platter recipe is loaded with a great combination flavors, done within 20 minutes and has an unmistakeable Spanish presentation. The perfect party platter for the holidays or anytime of the year, specially when you want a party platter that really takes things up a notch. I used a wood cutting board to serve my party platter, but you can always use a large platter dish.
Ingredients
· 1 can black pitted Spanish olives· 1 clove garlic· 1 tbsp extra virgin olive oil· 1/2 tsp dried oregano· 1 7 ounce block Manchego cheese· 3 slices smoked salmon· 3 ounces soft goat cheese· 1 tin Spanish anchovies· 10 green pitted Spanish olives· 1 cup Marcona almonds· fresh parsleyInstructions
1. Drain one 6 ounce can of black pitted olives (equals 1 cup) into a sieve and shake off any excess liquid, add the black olives to a large bowl, drizzle in 1 tablespoon of extra virgin olive oil,1 clove of minced garlic and 1/2 teaspoon of dried oregano, mix well, then transfer to a serving bowl and add to a cutting board or large platter2. Derind one 7 ounce block of Manchego cheese and cut into thin slices, decorate the slices of cheese on the board, drain a can of green pitted olives and shake off any excess liquid, grab one tin of Spanish anchovies, roll each anchovy over one green olive and pierce with a toothpick to secure, add them to a serving dish and onto the platter3. Grab 3 slices of smoked salmon and add about 1 ounce of soft goat cheese to each slice, then roll the salmon around the goat cheese and cut into 1/2-inch thick pieces, pierce with a toothpick to secure it all together, transfer to a serving dish and onto the platter4. Add some seedless green grapes to the platter, 1 cup of fried Marcona almonds, some whole wheat crackers and garnish the board with fresh parsley
